Beef Bourguignon

Hi lovelies, I have a wonderful recipe to share with you today! I was recently contacted by Sunrise Senior Living who provide assisted living support in Solihull and other areas to let me know about a series of recipes that their chefs have created in order to provide delicious and nutritionally balanced meals to their residents. They asked me to pick a recipe and give it a go myself to see how tasty it was and I decided to test the beef bourguignon, a dish that I've tried several times in restaurants but never made myself so I downloaded the recipe card to my phone and got to work!

I've followed the recipe pretty much to the letter, other than skipping the use of a leek to tie the bouquet garni and using 500ml of beef stock rather than 300ml as I wanted it to be nice and saucy. The resulting dish was just wonderful and filled the house with a gorgeous smell as it was bubbling away on the hob getting tender. It was rich and decadent and the absolute perfect winter dinner dish - I had mine with steamed asparagus and cauliflower and Pete had his with mashed potato.
